Nectarine and Sour Cherry Salsa


Nectarines and sour cherries are a great marriage.    Try this easy salsa recipe to create a light summer appetizer.   The salsa is also terrific on grilled chicken or salmon.   For this recipe, I used Door County Montmerancy cherries.   If not available, you can substitute with Bing cherries or Queen Anne cherries


Makes approximately 3 cups

2 cups fresh sour cherries, pitted and halved
2 nectarines, unpeeled, cut into ¼ to ½ inch cubes
2 tablespoons cup sugar (more to taste)
fresh lime juice from one lime
1/4 cup diced red onion
1/2 jalapeno pepper, seeded and finely diced (if you want more heat, add addition jalapeno)
1 tablespoons chopped fresh cilantro
1 tablespoons chopped fresh mint
pinch of salt
a grind of fresh black pepper

Combine all the ingredients and stir gently.   Cover and refrigerate to allow flavors to meld.
