- 8 medium potatoes, preferably Yukon Gold potatoes
- 6 shallots, peeled and thinly sliced
- 1/2 stick of unsalted butter, divided
- 6 medium sized fresh sage leaves
- salt and white pepper
Preheat the oven to 375 degrees.
Make deep cuts into each cleaned potatoes. You will want to make the cuts about 1/4 inch apart without cutting through completely.
Place a cut shallot into each slice. Arrange the potatoes cut side up in a baking pan which has been sprayed lightly with nonstick food spray such as PAM. Season lightly with salt and pepper. Dot with 1/2 of the unsalted butter.
Tightly cover the dish with foil and bake until potatoes are tender, about minute.
Uncover the potatoes. Blend together the chopped fresh sage and the remaining butter. Increase the heat to 425 degrees and top potatoes with the sage butter. Continue to bake the potatoes until crisp and golden brown, about 10 more minutes
