Sparkling Honey Lavender Lemonade
Sparkling water, fresh lemon juice and a lavender-infused honey syrup make this lemonade the perfect summer sipper. Prepare the lavender-honey syrup ahead of time and store in the refrigerator for up to a week. If you like dip the glass rims in lemon juice then superfine sugar.
serves 6 to 8
2 cups water
1 cup honey
1 tablespoon culinary lavender buds
a few drops of lavender or violet food coloring (optional)
1 cup fresh lemon juice
2 to 3 cups sparking water
lavender sprig and/or lemon wedges for garnish
Combine the water, honey and lavender buds in a saucepan. Heat on medium and bring to a low boil.
Remove from the heat and cover. Let the mixture steep for one hour.
Strain the buds out by pouring the mixture through a fine sieve. If desired, add a few drops of food coloring to the honey syrup. Discard the lavender buds and place the cooled lavender syrup in the refrigerator until ready to serve.
To serve, combine the lavender syrup, sparkling water and lemon juice. Stir to combine. Place ice cubes into glasses. Pour lemonade mixture into the glasses. Garnish with a lemon wedge or a sprig of fresh lavender.
